Which Olive Oils and Cultivars Have the Most Polyphenols? (Sicily Wins — Here's Why)

The answer is more interesting than a ranking. It comes down to four factors according to experts, and one island that happens to win on all of them.
In Part 1 of our Polyphenol Series, we covered what polyphenols are, why they're good for you, and why you want them in your olive oil. Polyphenols are the compounds responsible for everything from the anti-inflammatory effects of oleocanthal to the cardiovascular protection of hydroxytyrosol. If you haven't read it, start there.
This is Part 2: which olive oils actually have them, and why. The search for the highest-polyphenol olive oil has become a minor obsession in wellness circles, and with it has come a lot of marketing noise. Brands publishing single numbers with no methodology, claims about volcanic soil and ancient trees that are only partially true. Here's what the research actually says.
The short answer: it's not just the cultivar
A 2020 study by the University of Athens identified four primary determinants of polyphenol content in finished extra virgin olive oil: cultivar genetics, harvest timing, malaxation temperature and malaxation duration. A 2024 study by the University of Palermo confirmed that harvest period and milling method can shift polyphenol content dramatically — even within the same variety, grown on the same farm.
The cultivar sets the ceiling. Everything else determines how close to that ceiling the finished oil gets. The best olive oil for polyphenols is the one where all four factors line up correctly, which is why most high-polyphenol marketing claims are incomplete.
Factor 1: Cultivar genetics
Some cultivars are simply genetically predisposed to produce more phenolic compounds than others. Among Sicilian varieties, the research is consistent: Nocellara varieties — particularly Nocellara del Belice and Nocellara Messinese — consistently produce among the highest polyphenol concentrations studied. A 2026 study in Chemistry & Biodiversity found Nocellara del Belice exhibited the highest hydroxytyrosol concentration of the Sicilian cultivars examined. The 2024 University of Palermo study confirmed that Nocellara and Biancolilla both showed high biophenol content, particularly when harvested early.
The Tonda Iblea tells a more nuanced story. Some studies show lower total phenolics for Tonda Iblea as a standalone monovarietal. But a dedicated study on Monti Iblei DOP oils found that both antioxidant capacity and oxidative stability were directly correlated with the percentage of Tonda Iblea in the blend; in a blend, it pulls the whole oil upward. This is the argument for a thoughtfully constructed single-origin blend over a monocultivar.

Factor 2: Harvest timing
Most producers don't talk about this openly because it costs them yield. Polyphenol concentrations peak when the olive is still green and underripe. As it ripens and turns black, oil yield increases but phenolic concentrations decline sharply. An early-harvest oil can contain three to five times more polyphenols than a late-harvest oil from the same tree. We only make early harvest oil to capture the high polyphenol content and strong flavor.
The pepper at the back of your throat is the proof (oleocanthal and oleuropein, abundant in early-harvest oils, significantly reduced in late-harvest one)s. A smooth, neutral olive oil is not a refined one. It is a late-harvest one, or one that was processed in ways that destroyed what was there. The EFSA requires a minimum of 250mg/kg of polyphenols to make health claims. Most supermarket olive oils don't get close. Ours start at 250 mg/kg and go up to 307 mg/kg as measured by the lab.
Factor 3: Altitude and terroir
Altitude genuinely correlates with higher polyphenol content. Cooler temperatures at elevation slow maturation and allow phenolic compounds to accumulate longer before harvest. Research on Nocellara Etnea grown at different altitudes confirmed this consistently.
The Hyblaean Mountains of southeastern Sicily (where our orchard sits) range between 300 and 600 meters (1,000 to 2,000 feet) above sea level, with limestone-rich soils that drain well and force the olive trees to work for water. Not drought stress, which actually reduces polyphenols, but the kind of slow, mineral-rich environment that concentrates phenolic complexity over a long, cool season. The Monti Iblei DOP exists precisely because the EU recognized this territory as producing something measurably different from elsewhere.
Factor 4: What happens in the mill
Polyphenols are fragile. They can be substantially destroyed between harvest and bottle by heat, oxygen, time and water dilution during extraction. A cold-pressed label is a minimum legal standard (below 27°C / 80.6°F) — not a guarantee of polyphenol preservation. Two-phase centrifugation, inert-atmosphere malaxation and rapid processing all make a measurable difference. The cultivar sets the ceiling. The mill determines how close to that ceiling you get. What to look for when you buy
A harvest date — not just an expiration date. If you don't know when it was made, you don't know how old it is.
A specific region of origin — not just a country. "Product of Italy" tells you almost nothing. "Monti Iblei, southeastern Sicily" tells you something.
Named cultivars — if the label doesn't say which olive, ask why.
Dark glass or tin — polyphenols degrade in light. A clear bottle on a bright shelf is losing what made it valuable in real time.
And taste it! Smell it too. The pepper at the back of your throat is oleocanthal. It is not a flaw. That's the goal! If your olive oil tastes like nothing, it probably is nothing, at least nutritionally.
