Pull Over! Wild Asparagus Frittata Recipe

Ingredients:

1 bunch of wild asparagus with ends trimmed (1 or 1.5 cups)

6 of my neighbor's chicken eggs

1 yellow or white onion

olive oil

salt

Instructions:

Pre-heat oven to 350 F.

Chop asparagus into 1-2 inch pieces. Chop a little onion (1/4 to 1/2 depending on your taste). Cook everything with a pinch of salt and 2 tablespoons of olive oil on medium heat. Cover the pan and stir occasionally for 7 minutes or so until soft.  

Oil a round baking dish with some olive oil. Beat 6 eggs with a little pinch of salt in a bowl. Add 3/4 tablespoon of grated Grana Padano (or substitute with grated Parmegiano-Reggiano) and stir. Mix in the cooked asparagus and pour it all into the oiled baking dish. Put it in the oven and bake 20-30 minutes or until the sides are golden, the top is set and the middle doesn't jiggle. After it cools a bit, pop it out of the baking dish by flipping it over. Finish with olive oil.
